๐ Appam with Coconut Milk & Medu Vada
๐ Inspired by the legendary Sree Annapoorna Restaurant, Coimbatore, Tamil Nadu
๐ฅฅ The Art of Softness
Ingredients:
* Raw Rice
* Cooked Rice
* Fresh Coconut
* Fenugreek Seeds
* Yeast (or natural fermentation)
* Salt
* Fresh Coconut Milk
* Medu Vada
"Some recipes don't impress you with spices—they win your heart with simplicity."
This Appam is inspired by the legendary breakfast served in Coimbatore, where restaurants like Sree Annapoorna have been perfecting the art of soft, lacy Appams for generations. The magic lies not in expensive ingredients but in patience. The naturally fermented batter creates a paper-thin crispy edge while keeping the centre soft, fluffy, and almost cloud-like. Coconut milk, lightly sweetened and delicately fragrant, completes the experience, while a freshly fried Medu Vada adds the perfect savoury contrast. 0
As a chef, I've always believed that texture is just as important as flavour. The moment you tear into a warm Appam and dip it into chilled coconut milk, you understand why this breakfast has remained timeless across South India. Every bite feels comforting, elegant, and incredibly satisfying.
Some dishes fill your stomach. A few quietly stay with your soul. This Appam is one of them.
